Cajun Butter Barramundi

INGREDIENTS
- 4 barramundi fillets
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Chopped fresh parsley for garnish
- Lemon wedges for serving
RECIPE
- Pat the barramundi fillets dry with paper towels and season both sides with salt and pepper.
- Make the Cajun Butter: In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the Cajun seasoning and lemon juice. Cook for another minute, stirring constantly, then remove from heat.
- Preheat a skillet over medium-high heat. Once hot, add a drizzle of olive oil to the skillet. Place the barramundi fillets in the skillet, skin side down. Cook for about 3-4 minutes on each side, or until the fish is cooked through and easily flakes with a fork.
- Add the Cajun Butter: Once the barramundi is cooked, reduce the heat to low and pour the Cajun butter sauce over the fillets. Let the butter sauce warm through for a minute or two, spooning it over the fish to coat evenly.
- Transfer the barramundi fillets to serving plates. Spoon any remaining Cajun butter sauce over the top. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
