Swordfish with Garlic butter and vegetables

INGREDIENTS
- 4 swordfish steaks
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (optional, for garnish)

- Fresh vegetables: broccoli, carrots and zucchini
RECIPE
- Pat dry the swordfish steaks with paper towels and season both sides with salt and pepper.
- In a large skillet over medium heat, melt the butter. Add minced garlic and cook until fragrant, about 1 minute. - Optional use Steve Costi's Garlic butter.
- Place the swordfish steaks in the skillet and cook for about 4-5 minutes on each side, or until cooked through and golden brown. Baste the steaks with the garlic butter while cooking.
- Once the swordfish is cooked, remove it from the skillet and set it aside. Keep warm.
Steam the vegetables
- In a large pot fitted with a steamer basket, bring about 1 inch of water to a boil over medium-high heat.
- Add the broccoli florets, sliced carrots, and zucchini to the steamer basket. Season with salt and pepper.
- Cover the pot and steam the vegetables for about 5-7 minutes, or until they are tender but still crisp.
- Once the vegetables are cooked, remove them from the steamer basket and transfer to a serving dish. Drizzle with olive oil and toss gently to coat.
