Sydney Rock Oysters has a creamy, plump body with a clean finish and uphold the Sydney Rock name strongly. The oysters are rich and has a soft, creamy flesh when raw, turning brownish-grey when cooked. The shell is triangular in shape and is reasonably smooth with a pale edge meat.
