  • 1 whole Pla Kapong (Barramundi) fish, cleaned and scaled
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 3 limes
  • 2 teaspoons sugar
  • 1 teaspoon minced garlic and ginger
  • 1 tablespoon chopped fresh coriander
  • Vegetable oil for frying


  1. In a small bowl, mix together fish sauce, soy sauce, oyster sauce, lime juice, sugar, minced garlic, minced ginger, and chopped fresh coriander to make the marinade.
  2. Make diagonal cuts on both sides of the fish, about 1 inch apart. This helps the marinade penetrate the fish and ensures even cooking.
  3. Place the fish in a shallow dish and pour the marinade over it, making sure to coat both sides evenly. Let it marinate for at least 30 minutes in the refrigerator.
  4. Heat vegetable oil in a deep frying pan or wok over medium-high heat. The oil should be hot enough to sizzle when you add the fish.
  5. Carefully place the marinated fish into the hot oil, one side at a time. Fry until the fish is golden and crispy, about 5-7 minutes per side, depending on the size of the fish.
  6. Once the fish is cooked through and crispy on both sides, remove it from the oil and drain on paper towels to remove excess oil.
