- 1 whole Pla Kapong (Barramundi) fish, cleaned and scaled
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 3 limes
- 2 teaspoons sugar
- 1 teaspoon minced garlic and ginger
- 1 tablespoon chopped fresh coriander
- Vegetable oil for frying
RECIPE
- In a small bowl, mix together fish sauce, soy sauce, oyster sauce, lime juice, sugar, minced garlic, minced ginger, and chopped fresh coriander to make the marinade.
- Make diagonal cuts on both sides of the fish, about 1 inch apart. This helps the marinade penetrate the fish and ensures even cooking.
- Place the fish in a shallow dish and pour the marinade over it, making sure to coat both sides evenly. Let it marinate for at least 30 minutes in the refrigerator.
