Seared Scallop Salad with Lime Dressing

INGREDIENTS
- 24 scallops (roe on or off)
- 1 avocado, sliced
- 2 oranges, peeled and segmented
- 1 small Spanish (red) onion, finely diced
- 1 packet baby spinach
Lime Dressing
- 4 tablespoons olive oil
- 1-2 limes, juice and zest
- 1⁄2-1 teaspoon palm sugar or white sugar
RECIPE
- Heat a frying pan over high heat. Brush the scallops with oil and cook for 30 seconds to 1 minute on each side until they are just cooked.
- Combine olive oil, lime juice, lime zest, and sugar in a mixing bowl, and mix thoroughly.
- In another bowl, toss together avocado, orange segments, onion, and spinach with half of the lime dressing. Arrange the mixture on plates.
- Place the cooked scallops on top of the salad and drizzle with the remaining lime dressing. Enjoy!
