Seared Scallop Salad with Lime Dressing

For seafood lovers and scallop enthusiasts alike, this recipe is a must-try. With succulent scallops taking center stage, each bite promises a burst of oceanic flavors that will tantalize your taste buds.


  • 24 scallops (roe on or off)
  • 1 avocado, sliced
  • 2 oranges, peeled and segmented
  • 1 small Spanish (red) onion, finely diced
  • 1 packet baby spinach

Lime Dressing

  • 4 tablespoons olive oil
  • 1-2 limes, juice and zest
  • 1⁄2-1 teaspoon palm sugar or white sugar


  1. Heat a frying pan over high heat. Brush the scallops with oil and cook for 30 seconds to 1 minute on each side until they are just cooked.
  2. Combine olive oil, lime juice, lime zest, and sugar in a mixing bowl, and mix thoroughly.
  3. In another bowl, toss together avocado, orange segments, onion, and spinach with half of the lime dressing. Arrange the mixture on plates.
  4. Place the cooked scallops on top of the salad and drizzle with the remaining lime dressing. Enjoy!
