Ocean Trout Fillet with Maple Butter & Mash Potato
Ingredients
- 4 ocean trout fillets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 tablespoons unsalted butter, softened
- 2 tablespoons maple syrup
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 4 large potatoes, peeled and cut into chunks
- 1/2 cup milk or cream
- Chopped chives or parsley for garnish (optional)
RECIPE
1. Prepare the Mashed Potatoes:
- Place the potato chunks in a large pot and cover with cold water. Add a generous pinch of salt.
- Bring the water to a boil over medium-high heat, then reduce the heat to medium-low and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
- Drain the potatoes and return them to the pot.
- Add the butter and milk or cream to the pot with the potatoes.
- Mash the potatoes using a potato masher or fork until smooth and creamy. Season with salt and pepper to taste. Keep warm.
2. Prepare the Maple Butter:
- In a small bowl, mix together the softened butter, maple syrup, Dijon mustard, lemon juice, salt, and pepper until well combined. Set aside.
3. Cook the Ocean Trout:
- Pat the ocean trout fillets dry with paper towels and season both sides with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Once the skillet is hot, add the trout fillets, skin side down, and cook for about 3-4 minutes, or until the skin is crispy and golden.
