
Seafood Spanish Paella

Ingredients

2 cups short-grain rice

4 cups seafood broth (warm)

1/2 tsp saffron

3 tbsp olive oil

Vegetables: 1 onion (chopped), 3 garlic cloves (minced), 1 red bell pepper (sliced), 1 tomato (chopped), 1/2 cup peas

Spices: 1 tsp smoked paprika, salt & pepper

500g prawns, peeled and deveined

1 kg mussels or clams, cleaned

1 kg squid rings

Fresh parsley and lemon wedges to serve
Instructions:

Soak saffron threads in a little warm seafood broth to release flavor.

Heat olive oil in a wide, shallow paella pan or large skillet over medium heat.

Sauté onion, garlic, and red bell pepper until softened.

Stir in grated tomato and smoked paprika, cook for 2 minutes.

Add rice and stir to coat it in the mix.

Pour in warm seafood broth with saffron and bring to a simmer. Season with salt and pepper.

Arrange shrimp, mussels, and squid on top of the rice.

Cook without stirring for 15-20 minutes until rice is tender and liquid absorbed, adding peas in the last 5 minutes.

Remove from heat, cover with a towel, and let rest for 5 minutes.

Garnish with chopped parsley and lemon wedges. Serve and enjoy!
