Blue Swimmer Crab is caught up and down the coast of Queensland, as well as the western coastline of Australia. As they cook, blue swimmer crab shells change from a deep blue colour to a vibrant orange. Blue swimmer crabs have moist, evenly textured firm flesh with a sweet and juicy nutty flavour.
The firm texture and delicate sweet flavour of blue swimmer crab make it excellent for serving with pasta or making chilli crab. It's also popular for blue swimmer crab cakes, the crab meat can also be used as filling for tortellini and ravioli, or as the alternate layer in a lasagna.
