
Panko & Sesame Crusted Barramundi
Crispy barramundi with a nutty sesame crunch, served over creamy mashed potato and fresh steamed greens — a clean, flavorful dish ready in under 40 minutes.
INGREDIENTS
- 2 x barramundi fillets, skinless
- ½ cup panko breadcrumbs
- 2 tbsp sesame seeds
- ¼ cup plain flour
- 1 egg, beaten
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Salt & black pepper
- Neutral oil (for frying)
- 2 medium potatoes, peeled & cubed
- 2 tbsp butter
- ¼ cup milk or cream
- Fresh vegetables
RECIPE
. Prepare the Mashed Potato

Boil potatoes in salted water until soft (15–20 mins).

Drain and mash with butter, milk/cream, and a pinch of salt. Keep warm.
2. Prep the Fish

Pat dry and season barramundi with soy sauce, sesame oil, salt, and pepper.

Set up 3 bowls: flour → egg → panko + sesame seeds mix.

Dredge fish in flour, dip in egg, coat with sesame-panko.
3. Cook the Fish

Heat oil in a pan over medium heat.

Fry barramundi 3–4 mins per side until golden and cooked through.
4. Steam the Greens

Steam baby spinach or mixed veggies for 1–2 minutes until just tender.

Drizzle with olive oil or toss with butter and a pinch of salt.
5. Plate & Serve

Spoon mashed potato onto plate.

Add steamed greens.
-
Top with crispy barramundi.

Optional: Serve with lemon wedges or a drizzle of soy-lime sauce.
